Peningkatan Pengetahuan Pascabanjir melalui Penyuluhan Pengolahan Sayur dan Lele Aman Higienis Desa Geunteung, Pidie Jaya

Abstract


Food safety is a crucial aspect for post-flood communities in mitigating the risks of environmental contamination and limited access to clean water, which may contribute to foodborne diseases. This community service activity was conducted on August 1, 2026, in Geunteung Village, Pidie Jaya Regency, with the aim of improving community understanding of safe vegetable and catfish preparation based on the Five Keys to Safer Food principles recommended by the World Health Organization (WHO). The activity employed a prospective pre-test and post-test design using an evaluation instrument consisting of 20 questions. Sampling was conducted using a total population sampling approach, considering the relatively small target population (<30 individuals), with a total of 13 participants completing the evaluation instrument. The results showed a significant increase in knowledge, with the mean pre-test score increasing from 89.62% to 97.69% in the post-test. The significance of this change was confirmed using the Wilcoxon Signed-Rank test, which yielded a p-value of 0.011 (p<0.05), indicating a significant difference in participants' knowledge levels before and after the educational intervention. These findings demonstrate that interactive education on hygienic food preparation practices can effectively improve household food safety practices and contribute to protecting public health in disaster-affected areas.
